3 egg whites
30 g sugar
50 g Craisins® dried cranberries
400 g mixed berries
2 tablespoons of sugar
Remove the stalks and wash the mixed berries. Add sugar and mix to form a coulis.
Beat the egg whites until stiff. Add sugar.
Divide the egg whites between 4 ramekin dishes and add the Craisins® dried cranberries. Cook in the microwave on medium power for 30 to 45 seconds.
Divide the coulis between 4 glasses and place the egg white islands on top. Serve chilled. Remove the stalks and wash the mixed berries. Add sugar and mix to form a coulis.
